    ·     Stainless steel is not just one metal

    ·     It is a metal alloy comprising around 10% chromium, a percentage of nickel and several other metals as well

    ·     Chromium is what adds to its durability and prevents it from rusting

    ·     Nickel present in it also helps with rust resistance, and it also gives it extra hardness and that highly polished and shiny look

    ·     The “grade” of a particular kind of stainless steel is usually dictated by the balance of chromium and nickel in it

    ·     This grade of stainless steel is what also denotes the quality, durability, and the maximum cooking temperature of the alloy

    ·     So if you find something like “18/8 or 18/10” written on a Stainless Steel Cookware Set, understand that it is in fact the percentage of chromium and nickel respectively

    ·     These grades come in 3 main series:, namely 200, 300, and 400

    ·     If you are looking for a less expensive option, go for the 200 series. They are also less resistant because of the manganese in them in place of nickel and are bit more prone to corrosion.

    ·     The 300 series will have titanium or molybdenum in their alloy and very often be labeled as 304 respectively 316 represent.  These have high resistance to salt water erosion.

    ·    The 400 series is made up of alloys more corrosive than the 300 series. They are used to manufacture inexpensive stockpots, and many kitchen utensils. They are almost nickel free.
